- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
Instructions
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off excess grease.
- Add chopped onion and bell pepper to the skillet. Cook until softened, about 5-7 minutes.
- Stir in minced garlic, taco seasoning, chili powder, cumin, salt, and pepper. Cook for 1 minute until fragrant.
- Add uncooked rice, beef broth, and diced tomatoes (with their juice) to the skillet. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Stir in the rinsed and drained black beans.
- Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top of the rice mixture.
- Cover the skillet and cook for another 5 minutes, or until the cheese is melted and bubbly.
- Serve the cheesy taco rice skillet hot.
Notes
- For a spicier kick, add a pinch of cayenne pepper or a diced jalapeño with the onions and peppers.
- You can substitute ground turkey or ground chicken for the ground beef.
- If you don’t have an oven-safe skillet, you can transfer the mixture to a baking dish before adding the cheese and baking at 375°F (190°C) for 10-15 minutes, or until cheese is melted.
- Garnish with your favorite taco toppings like sour cream, salsa, avocado, or chopped cilantro.
