A delicious bake combining cauliflower, ground turkey, and cheese.

- 1.0 medium head cauliflower
- 1.0 pound ground turkey
- 1.0 cup shredded cheddar cheese
- 1.0 cup ricotta cheese
- 0.5 cup grated Parmesan cheese
- 1.0 cup spinach
- 1.0 tablespoon olive oil
- 1.0 teaspoon garlic powder
- 1.0 teaspoon onion powder
- 0.5 teaspoon smoked paprika
- to taste salt and pepper
- 0.5 cup breadcrumbs
- for garnish fresh parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-7 minutes until tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add ground turkey, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until turkey is browned and fully cooked, about 7-10 minutes. Drain any excess fat.
- In a large mixing bowl, combine the cooked turkey, boiled cauliflower, chopped spinach, ricotta cheese, and half of the cheddar cheese. Stir until well mixed.
- Transfer the turkey and cauliflower mixture to a greased 9×13 inch baking dish. Spread it out evenly.
- Sprinkle the remaining cheddar cheese and Parmesan cheese over the top. If using, add breadcrumbs for a crunchy topping.
- Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and the cheese is bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley, if desired, and serve warm.
