Description

Cheesy Beef & Rice Delight is a comforting and satisfying one-pot meal that combines savory ground beef, fluffy rice, vibrant vegetables, and melted cheddar cheese. It’s an easy recipe perfect for busy families, offering wholesome ingredients and delicious flavors.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup uncooked long-grain white rice
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large, oven-safe skillet over medium heat.
  3. Add chopped onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
  4. Add ground beef. Cook until browned, about 5-7 minutes, breaking it apart. Drain excess fat.
  5. Stir in uncooked rice, undrained diced tomatoes, beef broth, frozen mixed vegetables, smoked paprika, Italian seasoning, salt, and pepper.
  6. Bring the mixture to a simmer. Cover the skillet, reduce heat to low, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
  7. Remove skillet from heat. Sprinkle cheddar cheese evenly over the top.
  8. Place skillet in the preheated oven. Bake uncovered for 10-15 minutes, until cheese is melted and bubbly.
  9. Remove from oven, let cool for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

  • For a healthier option, you can skip the olive oil.
  • This is a one-pan meal, minimizing cleanup.
  • Serve with a side salad or crusty bread for a complete meal.
