Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- Prepare the Apple Filling: In a medium bowl, combine the diced apples, brown sugar, cinnamon, and lemon juice. Mix well and set aside.
- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the sour cream, eggs, and vanilla extract. Mix until fully combined and creamy.
- Prepare the Crisp Topping: In another bowl, combine rolled oats, flour, brown sugar, cinnamon, and melted butter. Mix until crumbly.
- Assemble the Cheesecakes: Spoon a small amount of the cheesecake filling into the bottom of each cupcake liner, filling about ⅓ full. Add a spoonful of the apple filling on top, then a layer of the cheesecake filling until the liners are about ¾ full.
- Add the Crisp Topping: Sprinkle the crisp topping generously over each cheesecake.
- Bake: Place the muffin tin in the preheated oven and bake for 30-35 minutes, or until the cheesecakes are set and the tops are golden.
- Cool: Remove the muffin tin from the oven and allow the cheesecakes to cool in the tin for about 15 minutes. Then transfer them to a wire rack to cool completely.
- Chill: For best results, refrigerate the cheesecakes for at least an hour before serving. This helps them set further and enhances the flavors.
- Remove the cheesecakes from the liners and serve with optional toppings if desired.
