Instructions
- Preheat your oven to 200°C (400°F) and line a large baking tray with parchment paper.
- Prepare your beef sausages by scoring them lightly with a sharp knife or cutting them into chunks if they are large.
- Wash and chop your bell peppers, red onion, and any root vegetables into roughly 1-inch pieces. Cut zucchini into half-moons or chunks.
- In a large mixing bowl, combine the prepared beef sausages and chopped vegetables. Drizzle with olive oil and sprinkle with seasonings. Toss everything together to ensure even coating.
- Transfer the seasoned sausages and vegetables onto the lined baking tray in a single layer, avoiding overcrowding.
- Bake in the preheated oven for 20-25 minutes. Remove from the oven, toss everything, and return to bake for another 15-20 minutes until sausages are browned and cooked through, and vegetables are tender-crisp. Add cherry tomatoes in the last 10-15 minutes if desired.
- Remove from the oven and garnish with fresh parsley or chives. Serve hot directly from the tray or plate it up.
