  • 2 lbs ground beef 80-85% lean
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 3/4 cup milk
  • 3/4 cup breadcrumbs, preferably Panko
  • 3 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp Worcestershire sauce
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tsp white vinegar (for glaze)

Instructions

  1. Finely dice 1 medium onion and mince 3 cloves garlic. In a large bowl, combine 3/4 cup Panko breadcrumbs with 3/4 cup milk and let sit for 5 minutes.
  2. In a separate bowl, whisk 2 large eggs, 1/4 cup ketchup, 1 tsp Worcestershire sauce, 1 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp Italian seasoning, and 2 tbsp fresh parsley. Pour this mixture, along with the diced onion and minced garlic, into the breadcrumb mixture. Stir well.
  3. Add 2 lbs ground beef to the bowl. Gently mix with clean hands until just combined, avoiding overmixing to keep the meatloaf tender.
  4. Either press the mixture into a lightly greased 9×5-inch loaf pan or shape into a 9×5-inch oblong loaf on a parchment-lined baking sheet. Do not pack too tightly.
  5. Preheat oven to 350°F (175°C). Bake the meatloaf for 35-40 minutes without glaze.
  6. While meatloaf bakes, whisk together 1/2 cup ketchup, 2 tbsp brown sugar, and 1 tsp white vinegar in a small bowl until smooth.
  7. After 35-40 minutes, remove meatloaf from oven. Generously spread the prepared glaze over the top and sides.
  8. Return glazed meatloaf to oven. Bake for an additional 20-30 minutes, or until internal temperature reaches 160°F (71°C).
  9. Remove from oven and let rest for 10-15 minutes before slicing and serving.
