Baked Cod in Coconut Lemon Cream Sauce – A Flavorful Delight


Ingredients

  • 1 can of full-fat coconut milk
  • 2 tablespoons of freshly squeezed lemon juice
  • 2 minced garlic cloves
  • Salt
  • Pepper
  • Fresh herbs (cilantro or parsley)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a baking dish with oil or non-stick spray.
  3. In a medium bowl, combine 1 can of full-fat coconut milk, 2 tablespoons of freshly squeezed lemon juice, 2 minced garlic cloves, and a pinch of salt and pepper. Mix well until all ingredients are incorporated.
  4. Place the cod fillets in the prepared baking dish, ensuring they are spread out evenly.
  5. Carefully pour the coconut lemon cream sauce over the cod fillets, making sure they are well coated.
  6. Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cod flakes easily with a fork and is opaque throughout.
  7. Once baked, remove the dish from the oven and sprinkle with fresh herbs like chopped cilantro or parsley.
  8. Serve the baked cod hot, spooning some of the sauce over the top.
