Description

A quick and easy recipe for Zesty Lemon Garlic Butter Salmon with Asparagus, perfect for a weeknight meal. This dish features succulent salmon fillets coated in a bright, tangy lemon garlic butter sauce, served alongside tender roasted asparagus.

Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 1 lb fresh asparagus, trimmed
  • 4 tablespoons unsalted butter, divided
  • 3 cloves garlic, finely minced
  • Zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the asparagus: Rinse and trim the woody ends. Spread on a baking sheet, drizzle with 1 tablespoon olive oil, season with salt and pepper, and toss to coat.
  3. Create the lemon garlic butter: Melt 3 tablespoons of butter in a small saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Remove from heat and stir in lemon juice and zest.
  4. Arrange the salmon: Move asparagus to the sides of the baking sheet. Place salmon fillets skin-side down in the center. Drizzle the lemon garlic butter generously over each fillet. Season with salt and pepper.
  5. Add a final touch of butter: Dot the remaining 1 tablespoon of butter, cut into small pieces, over the salmon fillets.
  6. Bake for 12-15 minutes, or until the salmon flakes easily and the asparagus is tender.
  7. Garnish with chopped fresh parsley and serve immediately with lemon slices.

Notes

  • For best results, ensure your oven is fully preheated before baking.
  • Be careful not to brown the garlic when sautéing, as this can make it bitter.
  • Adjust baking time based on the thickness of your salmon fillets.
