Description

Warm & Cozy Carrot Soup Recipe – Healthy, Simple & Flavorful


Ingredients

  • 6 oz beef bacon, 6 strips, chopped
  • 1 large yellow onion, diced (2 cups)
  • 1 celery rib, diced (1/2 cup)
  • 2 lbs carrots, 8 large, peeled and sliced into 1/2” thick rings
  • 2 garlic cloves, minced
  • 2 tsp sea salt, or to taste
  • 1/8 tsp black pepper
  • 4 cups chicken stock, or broth (reduced sodium)
  • 1/2 cup milk
  • 1/2 cup heavy whipping cream, plus more to garnish
  • 2 Tbsp parsley, to garnish (optional)

Instructions

  1. Cook Beef Bacon: In a large pot or Dutch oven, cook the 6 oz chopped beef bacon over medium heat until crispy. Remove bacon with a slotted spoon, reserving 1-2 tablespoons of drippings in the pot. Set crispy bacon aside for garnish.
  2. Sauté Aromatics: Add the diced yellow onion and celery to the reserved bacon drippings in the pot. Sauté over medium heat for 8-10 minutes until softened and translucent.
  3. Add Carrots & Garlic: Stir in the 2 lbs sliced carrots and 2 minced garlic cloves. Cook for another 5 minutes, stirring occasionally.
  4. Simmer Soup: Pour in the 4 cups chicken stock. Add 2 tsp sea salt and 1/8 tsp black pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until carrots are very tender.
  5. Blend Soup: Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, carefully transfer soup in batches to a regular blender (filling no more than halfway), blend until smooth, and return to the pot.
  6. Add Creaminess: Stir in 1/2 cup milk and 1/2 cup heavy whipping cream. Heat gently over low heat, stirring occasionally, until warmed through. Do not boil.
  7. Final Seasoning & Serve: Taste the soup and adjust salt and pepper as needed. Ladle into bowls. Garnish with reserved crispy beef bacon, a swirl of extra heavy cream, and fresh parsley (optional).

Notes

  • This soup can be stored in the refrigerator for up to 3 days.
  • It can be frozen for up to 2 months.
