Description

These Vampire Bite Halloween Cupcakes are the ultimate spooky treat for the festive season. They are delicious and capture the spirit of Halloween with a playful yet chilling design.

Ingredients

Scale
  • 1 box (15.25 oz) red velvet cake mix
  • 1 1/3 cups water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • For the Frosting:
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 12 tablespoons milk
  • Red gel food coloring
  • For the “Bite” effect (optional):
  • Strawberry or raspberry jam
  • Slivered almonds or white candy melts (for fangs)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, combine the red velvet cake mix, water, vegetable oil, and eggs. Beat with an electric mixer on medium speed for 2 minutes, or until well combined.
  3. Pour the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
  4. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  5. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  6. While the cupcakes cool, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.
  7. Beat in the vanilla extract.
  8. Gradually add the powdered sugar, alternating with milk (1 tablespoon at a time), until the frosting reaches your desired consistency. Beat until light and fluffy.
  9. Divide the frosting into two bowls. Tint one bowl with red gel food coloring to create a “bloody” effect. Leave the other bowl white or tint it a pale shade if desired.
  10. Once the cupcakes are completely cool, frost them. You can use a piping bag with a star tip for a decorative effect, or simply spread the frosting with a knife.
  11. To create the “vampire bite” effect:
  12. Pipe or spread the red frosting onto the cupcakes.
  13. Using a knife or small spoon, gently press into the side of the cupcake to create an indentation, as if a vampire took a bite.
  14. Fill the indentation with strawberry or raspberry jam to mimic blood.
  15. For fangs, insert slivered almonds or small pieces of white candy melts into the sides of the cupcakes.
  16. These Vampire Bite Halloween Cupcakes are ready to serve and spook your guests!

Notes

  • Ensure all ingredients for the frosting are at room temperature for a smoother texture.
  • Adjust the amount of milk in the frosting to achieve the perfect spreadable or pipeable consistency.
  • Get creative with your “bite” effect – you can make it subtle or dramatic.
  • For an extra spooky touch, consider adding edible glitter or black sprinkles.
  • These Halloween vampire cupcakes are a fun DIY project for kids and adults alike.
