  • Salt and pepper to taste
  • 1 cup heavy cream or coconut cream (dairy-free alternative)
  • 1/2 cup fresh basil leaves, chopped (plus extra for garnish)
  • A squeeze of fresh lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Pour in crushed tomatoes and vegetable broth. Add dried oregano and optional sugar. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer uncovered for 10 minutes.
