Ingredients
Scale
- 2 tablespoons olive oil
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon sugar (optional)
- Salt and pepper to taste
- 1 cup heavy cream or coconut cream (dairy-free alternative)
- 1/2 cup fresh basil leaves, chopped (plus extra for garnish)
- A squeeze of fresh lemon juice (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and sauté until fragrant, about 1-2 minutes.
- Pour in crushed tomatoes and vegetable broth. Add dried oregano and optional sugar. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer uncovered for 10 minutes.
- Blend the soup until smooth using an immersion blender or carefully in batches with a countertop blender.
- Return soup to the pot if using a countertop blender. Stir in heavy cream or coconut cream and chopped basil. Heat through for 2-3 minutes.
- Taste and adjust seasoning with salt, pepper, and optional lemon juice.
- Serve hot, garnished with extra basil. Pair with crusty bread or grilled cheese.
Notes
- For a dairy-free option, use coconut cream instead of heavy cream.
- Adjust sugar to balance the acidity of the tomatoes to your preference.
- Lemon juice can be omitted if desired, but it adds a nice brightness.
