- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1 cup barbecue sauce
- 1 cup corn kernels
- 1/2 cup black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup green onions, sliced (for garnish)

Instructions
- Preheat your oven to 400°F (200°C).
- Rinse and scrub the sweet potatoes. Pierce each potato several times with a fork. Place on a parchment-lined baking sheet.
- Bake for 40-45 minutes, or until fork-tender.
- In a large bowl, combine shredded chicken, barbecue sauce, corn, black beans, garlic powder, onion powder, salt, and pepper. Mix well.
- Remove sweet potatoes from the oven and let them cool slightly. Lower oven temperature to 350°F (175°C).
- Slice each sweet potato lengthwise, avoiding cutting all the way through. Fluff the insides with a fork.
- Spoon the BBQ chicken mixture into each potato.
- Sprinkle shredded cheddar cheese evenly over the stuffed sweet potatoes.
- Return to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
