Description

Enjoy delicious and nutritious Sweet & Smoky BBQ Chicken Stuffed Sweet Potatoes, a perfect meal for family dinners or meal prep. This recipe features tender BBQ chicken, corn, black beans, and melted cheese nestled in fluffy baked sweet potatoes.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1 cup barbecue sauce
  • 1 cup corn kernels
  • 1/2 cup black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup green onions, sliced (for garnish)
  • Optional toppings: Greek yogurt or sour cream, sliced jalapeños, fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and scrub the sweet potatoes. Pierce each potato several times with a fork. Place on a parchment-lined baking sheet.
  3. Bake for 40-45 minutes, or until fork-tender.
  4. In a large bowl, combine shredded chicken, barbecue sauce, corn, black beans, garlic powder, onion powder, salt, and pepper. Mix well.
  5. Remove sweet potatoes from the oven and let them cool slightly. Lower oven temperature to 350°F (175°C).
  6. Slice each sweet potato lengthwise, avoiding cutting all the way through. Fluff the insides with a fork.
  7. Spoon the BBQ chicken mixture into each potato.
  8. Sprinkle shredded cheddar cheese evenly over the stuffed sweet potatoes.
  9. Return to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  10. Remove from oven, let cool for a couple of minutes. Garnish with sliced green onions and any desired optional toppings.
  11. Serve warm.
