Elegant and easy-to-make, these Cranberry Brie Thyme Phyllo Cups combine creamy melted Brie, tangy cranberry sauce, and aromatic fresh thyme in a crispy, golden phyllo shell. A perfect sweet and savory appetizer for any festive gathering.

- 1 package mini phyllo shells (15 cups)
- 8 oz Brie cheese, rind removed and diced
- 1/2 cup fresh cranberries, coarsely chopped
- 2 tablespoons honey
- 1 tablespoon fresh thyme leaves, finely chopped
- 1 tablespoon unsalted butter, melted (optional, for brushing)
- Salt and freshly ground black pepper, to taste (optional)
- 1 tablespoon balsamic glaze (optional, for drizzling)
- Toasted chopped pecans or walnuts (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). Dice Brie cheese into 1/4-1/2 inch cubes, removing rind if preferred. Finely chop fresh thyme leaves.
- In a small saucepan, combine 1/2 cup coarsely chopped fresh cranberries with 1 tablespoon of the honey. Simmer over low heat for 5-7 minutes, gently mashing cranberries, until they burst and form a thickened, sauce-like consistency. Let cool slightly.
- Arrange phyllo shells on a baking sheet. If desired, lightly brush the edges of each shell with melted butter. Place 3-4 Brie cubes (approx. 1 tablespoon) into each phyllo shell. Top Brie with 1-1.5 teaspoons of the cooled cranberry mixture. Sprinkle each cup with a pinch of finely chopped thyme, and optionally, a tiny pinch of salt and black pepper.
- Bake for 10-15 minutes, or until the phyllo is golden brown and crispy, and the Brie is completely melted and bubbly. Monitor closely as phyllo can brown quickly.
- Remove from oven and let cool on the baking sheet for 5 minutes. Transfer to a serving platter. Drizzle with the remaining 1 tablespoon of honey and/or balsamic glaze, and garnish with toasted nuts or extra fresh thyme, if desired. Serve warm.

- These cups are best served warm.
- You can prepare the cranberry mixture a day in advance.
- Feel free to experiment with different nuts for garnish.
