Ingredients

  • 3 ripe bananas
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract
  • 1/2 cup sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan with butter or non-stick spray, or line it with parchment paper.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. In a separate bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add the eggs, vanilla extract, and almond extract to the butter-sugar mixture and mix until fully combined.
  6. Gently fold the mashed bananas into the wet mixture.
  7. In another bowl, whisk together the flour, baking soda, and salt.
  8. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  9. If using sprinkles, fold them into the batter now.
  10. Transfer the batter into your prepared loaf pan, smoothing the top with a spatula.
  11. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
