- 1 can (14.5 oz) diced fire-roasted tomatoes
- 1 can (15 oz) black beans or kidney beans, drained and rinsed
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 bell pepper, chopped (any color)
- 2 cups low-sodium chicken or vegetable broth
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
- Stir in ground meat, breaking it apart as it cooks until browned. Drain excess fat if necessary.
- Add chopped bell peppers, chili powder, and cumin; stir until fragrant.
- Pour in the diced tomatoes (with juices) and drained beans, mixing well.
- Add broth to reach your desired consistency and bring to a gentle simmer for about 10 minutes.
