  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 1 & 3/4 cup all-purpose flour
  • 1 tbsp cornstarch
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground ginger
  • ¼ tsp ground cinnamon
  • ¾ cup dried cranberries (roughly chopped)
  • ¾ cup white chocolate chips (or chopped white chocolate)
  • 4 oz cream cheese (softened)
  • 2 Tbsp unsalted butter (softened)
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • 1 tsp orange zest
  • ¼ tsp salt
  • 3 oz white chocolate (melted and slightly cooled)
  • ¼ cup dried cranberries (roughly chopped)
  • 1 oz white chocolate (melted for drizzle)
  • Extra orange zest (optional)

Instructions

  1. Preheat oven to 350F. Line an 8×8 inch baking pan with parchment paper.
  2. Whisk together the melted butter and brown sugar until smooth, about 1 minute.
  3. Add in the eggs, vanilla extract, and orange zest and mix until combined.
  4. In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, ginger, and cinnamon.
  5. Fold the dry ingredients into the wet ingredients until just combined. Fold in dried cranberries and white chocolate chips.
  6. Spread the thick batter evenly into the prepared pan.
  7. Bake for 22-26 minutes, or until edges are set and a toothpick comes out with a few moist crumbs.
  8. Let cool completely in the pan on a wire rack (at least 1 hour).
  9. Beat cream cheese and butter together until light and fluffy.
  10. Add powdered sugar and beat until smooth. Mix in vanilla extract, orange zest, and melted white chocolate.
  11. Spread frosting evenly over the cooled bars.
  12. Sprinkle chopped dried cranberries over the frosting and drizzle with melted white chocolate.
  13. Refrigerate for at least 30 minutes to set the frosting before cutting.
  14. Lift the bars out of the pan using parchment overhang and cut into 16 squares.

Notes

  • Use room temperature eggs for better mixing.
  • Don’t overmix the batter to maintain a soft texture.
