Description

  • 4 cups sliced yellow squash
  • 1 medium onion, chopped
  • 2 large eggs
  • 1 cup grated cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter (for the topping)
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 sleeve Ritz crackers, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt 2 tablespoons of butter over medium-low heat. Add the sliced yellow squash and chopped onion. Cook until tender, stirring occasionally.
  3. In a large bowl, whisk the eggs. Add the grated cheddar cheese and milk, whisking until combined.
  4. Add the cooked squash and onions to the egg mixture and stir well.
  5. Melt the remaining 2 tablespoons of butter in the same skillet. Add this melted butter to the squash mixture. Stir in the cayenne pepper (if using), kosher salt, and ground black pepper.
  6. Spray a 9×13-inch casserole dish with cooking spray. Pour the squash mixture into the prepared dish.
  7. Sprinkle the crushed Ritz crackers evenly over the top of the casserole.
  8. Bake for 45 minutes, or until the topping is golden brown and the casserole is set.
  9. Let the squash casserole rest for 3 minutes before serving.
