- 4 cups sliced yellow squash
- 1 medium onion, chopped
- 2 large eggs
- 1 cup grated cheddar cheese
- 1 cup milk
- 2 tablespoons butter (for the topping)

- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 sleeve Ritz crackers, crushed
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt 2 tablespoons of butter over medium-low heat. Add the sliced yellow squash and chopped onion. Cook until tender, stirring occasionally.
- In a large bowl, whisk the eggs. Add the grated cheddar cheese and milk, whisking until combined.
- Add the cooked squash and onions to the egg mixture and stir well.
- Melt the remaining 2 tablespoons of butter in the same skillet. Add this melted butter to the squash mixture. Stir in the cayenne pepper (if using), kosher salt, and ground black pepper.
- Spray a 9×13-inch casserole dish with cooking spray. Pour the squash mixture into the prepared dish.
- Sprinkle the crushed Ritz crackers evenly over the top of the casserole.
- Bake for 45 minutes, or until the topping is golden brown and the casserole is set.
- Let the squash casserole rest for 3 minutes before serving.
