Ingredients
Scale
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef or turkey
- 2 (15 ounce) cans kidney beans, drained and rinsed
- 2 (15 ounce) cans black beans, drained and rinsed
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can tomato sauce
- 1 cup beef or vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add ground beef or turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Stir in kidney beans, black beans, diced tomatoes, tomato sauce, and broth.
- Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally. For a spooktacular Halloween chili, let it simmer longer for deeper flavor.
- Taste and adjust seasonings as needed.
- Serve your spooktacular Halloween chili hot with your favorite toppings.
Notes
- For a vegetarian Halloween chili, omit the ground meat and add an extra can of beans or some cubed sweet potatoes.
- Adjust the spice level by adding more or less chili powder or a pinch of cayenne pepper.
- This Halloween chili is even better the next day as the flavors meld together.
- Get creative with Halloween-themed toppings like cheese cut into ghost shapes or olive slices for spider eyes.
