This hearty chili features a rich blend of beans and spices, creating a warm and festive dish that’s a feast for both the eyes and the taste buds. Customize it with your favorite ingredients for a truly spooktacular experience.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 2 (15 ounce) cans kidney beans, drained and rinsed
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 cup beef or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Add ground beef or turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Stir in kidney beans, black beans, diced tomatoes, tomato sauce, and broth.
  5. Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine.
  6. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally. For a spooktacular Halloween chili, let it simmer longer for deeper flavor.
  7. Taste and adjust seasonings as needed.
  8. Serve your spooktacular Halloween chili hot with your favorite toppings.

Notes

  • For a vegetarian Halloween chili, omit the ground meat and add an extra can of beans or some cubed sweet potatoes.
  • Adjust the spice level by adding more or less chili powder or a pinch of cayenne pepper.
  • This Halloween chili is even better the next day as the flavors meld together.
  • Get creative with Halloween-themed toppings like cheese cut into ghost shapes or olive slices for spider eyes.
