Description

This Jalapeño Popper Stuffed Meatloaf combines classic meatloaf with creamy, spicy jalapeño poppers. It’s a show-stopping dish for your dinner table.


Ingredients

  • 2 lbs Ground Beef
  • 1 cup Panko breadcrumbs
  • 1 large egg
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1 tsp Freshly cracked black pepper
  • 2 tbsp Non-alcoholic Worcestershire sauce or beef broth (optional)
  • 8 oz Full-fat cream cheese
  • 1 cup Shredded sharp cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 2 Fresh jalapeños
  • 1 cup Cooked beef bacon (optional but recommended)
  • 1 tsp Cayenne pepper or chili powder (optional)
  • 1/2 cup Ketchup
  • 1/4 cup Brown sugar
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Hot sauce (optional)

Instructions

  1. Cook beef bacon until crispy. Let it cool, then crumble it up.
  2. Wash jalapeños, slice in half, and scoop out seeds for less heat. Finely dice them.
  3. In a bowl, mix cream cheese, cheddar, Monterey Jack, diced jalapeños, and beef bacon (if using).
  4. In a large bowl, combine ground beef, panko, egg, garlic powder, onion powder, salt, black pepper, and Worcestershire sauce or beef broth.
  5. Mix gently with hands until just combined.
  6. Preheat oven to 375°F (190°C).
  7. Lay parchment paper or aluminum foil on the counter.
  8. Turn out meatloaf mixture onto the parchment/foil and shape it into a rectangle (12×9 inches, ½-inch thick).
  9. Spread jalapeño popper filling over the meatloaf, leaving a 1-inch border.
  10. Roll the meatloaf tightly from one long side, using the parchment/foil to help.
  11. Pinch and seal the ends and seam to prevent filling from escaping.
  12. Transfer rolled meatloaf to a baking sheet or loaf pan.
  13. Bake for 45 minutes. While baking, whisk together glaze ingredients: ketchup, brown sugar, apple cider vinegar, and optional hot sauce.
  14. After 45 minutes, spread glaze over the meatloaf.
  15. Return to oven and bake for another 15-20 minutes until internal temperature reaches 160°F (71°C).
  16. Let the meatloaf rest for 10-15 minutes before slicing.
  17. Slice into thick pieces and serve warm.

  • Adjust jalapeño heat level to your preference by leaving seeds in or out.
