Description

A hearty and flavorful Spicy Cajun Sausage Potato Soup that warms you up.


Ingredients

Scale
  • 1 pound spicy Cajun sausage, sliced
  • 4 medium-sized potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper, diced
  • 1 teaspoon smoked paprika
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the sliced Cajun sausage to the pot and cook until it’s browned, about 5-7 minutes.
  3. Stir in the chopped onion, garlic, and diced bell pepper. Sauté until soft, approximately 4-5 minutes.
  4. Pour in the chicken broth and add the can of diced tomatoes (with juices). Stir to combine.
  5. Toss in the diced potatoes, Cajun seasoning, smoked paprika, and season with salt and pepper.
  6. Bring to a boil, then reduce heat and let it simmer for about 20-25 minutes, until the potatoes are tender.
  7. Stir in the heavy cream and corn. Let it simmer for an additional 5-10 minutes.
  8. Taste and adjust seasonings as needed.
  9. Ladle into bowls and garnish with fresh parsley before serving.

  • Feel free to adjust the spice level by adding more or less Cajun seasoning.
