A hearty and flavorful Spicy Cajun Sausage Potato Soup that warms you up.
Ingredients

- 1 pound spicy Cajun sausage, sliced
- 4 medium-sized potatoes, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup corn (fresh, frozen, or canned)
- 1 bell pepper, diced
- 1 teaspoon smoked paprika
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the sliced Cajun sausage to the pot and cook until it’s browned, about 5-7 minutes.
- Stir in the chopped onion, garlic, and diced bell pepper. Sauté until soft, approximately 4-5 minutes.
- Pour in the chicken broth and add the can of diced tomatoes (with juices). Stir to combine.
- Toss in the diced potatoes, Cajun seasoning, smoked paprika, and season with salt and pepper.
- Bring to a boil, then reduce heat and let it simmer for about 20-25 minutes, until the potatoes are tender.
- Stir in the heavy cream and corn. Let it simmer for an additional 5-10 minutes.
- Taste and adjust seasonings as needed.
- Ladle into bowls and garnish with fresh parsley before serving.
Notes
- Use fresh ingredients for best flavor.
- Feel free to adjust the spice level by adding more or less Cajun seasoning.
- Leftovers can be stored in the refrigerator for up to 3 days.
