Ingredients

  • Spaghetti
  • Fresh garlic
  • Unsalted butter
  • Fresh parsley
  • Grated Parmesan or a mix of Italian cheeses
  • Red pepper flakes

Instructions

  1. Start by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and set aside, saving a cup of pasta water.
  2. While the spaghetti is cooking, melt ½ cup of unsalted butter in a saucepan over medium heat. Add 4-5 minced garlic cloves and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic!
  3. Stir in ¼ cup of chopped fresh parsley, ½ teaspoon of red pepper flakes (if using), and salt to taste. Mix well to combine the flavors.
  4. Add the drained spaghetti to the saucepan with the garlic butter mixture. Toss everything together, adding a little reserved pasta water if needed to help the sauce cling to the spaghetti.
  5. Preheat your oven to 375°F (190°C). Take a loaf of French or Italian bread and slice it in half lengthwise. Spread the remaining garlic butter mixture generously on both halves of the bread.
  6. Place the bread on a baking sheet and bake for about 10-12 minutes or until the edges are golden and crispy. If you like it extra crunchy, you can broil it for the last 1-2 minutes, but watch carefully to prevent burning!
  7. Slice the garlic bread and serve it hot alongside your spaghetti. Don’t forget to sprinkle some extra cheese and parsley on top of the spaghetti for that finishing touch!
