Description

Slow Cooker Street Corn Chicken brings the vibrant flavors of Mexican street food right into your kitchen with minimal effort. This dish perfectly blends beloved street corn flavors with succulent, shredded chicken, simmered to perfection for tacos, bowls, or on its own.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 cups frozen sweet corn
  • 4 oz cream cheese, full-fat or vegan alternative
  • 1/3 cup crumbled cotija cheese or feta
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 cup fresh cilantro, chopped (for garnish)
  • 1/2 cup chicken broth
  • 1 tbsp ground cumin
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1/2 tsp cayenne pepper (optional)

Instructions

  1. Gather all ingredients. Line slow cooker if desired.
  2. Place chicken in a single layer at the bottom of the slow cooker.
  3. Evenly sprinkle frozen corn over the chicken. Add cream cheese chunks on top.
  4. Gently pour chicken broth over ingredients.
  5. Season generously with chili powder, cumin, smoked paprika, minced garlic, onion powder, salt, black pepper, and cayenne (if using).
  6. Secure lid. Cook on LOW for 6-8 hours, or on HIGH for 3-4 hours. Avoid lifting lid during cooking.
  7. Once chicken is tender, remove and shred with two forks.
  8. Stir the creamy corn mixture in the slow cooker until smooth.
  9. Return shredded chicken to the slow cooker and stir to coat.
  10. Stir in fresh lime juice and half of the chopped fresh cilantro.
  11. Taste and adjust seasoning as needed.
  12. Serve warm, garnished with remaining cilantro and crumbled cotija cheese. Enjoy on its own, in tacos, rice bowls, or quesadillas.
