  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 4 tablespoons unsalted butter
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, finely chopped
  • Cooked rice or quinoa for serving (optional)

Instructions

  1. Rinse shrimp and pat dry. Trim asparagus and cut into 2-inch pieces.
  2. Melt butter in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.
  3. Add asparagus to the skillet, season with salt and pepper, and sauté for 3-4 minutes until tender-crisp.
  4. Push asparagus to one side. Add shrimp to the other side, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque.
  5. Drizzle lemon juice over shrimp and asparagus. Gently toss to combine flavors.
