- 1/4 cup breadcrumbs

Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the turkey breast by slicing it horizontally, about halfway through, and opening it like a book. Cover with plastic wrap and pound to an even 1/4-inch thickness.
- In a skillet, heat olive oil over medium heat. Add bell peppers and onion, sautéing until softened, about 5 minutes.
- Stir in spinach, breadcrumbs, thyme, rosemary, and garlic powder. Cook for another 2 minutes until spinach wilts. Season with salt and pepper.
- Spread the vegetable mixture evenly over the pounded turkey breast, leaving a small border.
- Carefully roll up the turkey breast tightly, starting from one of the longer sides.
- Tie the roulade securely with kitchen twine at intervals to maintain its shape.
- Season the outside of the roulade with salt and pepper.
- Place the turkey roulade in a roasting pan.
- Roast for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the roulade rest for 10 minutes before slicing and serving.
