  • 1 tablespoon olive oil
  • 1 teaspoon salt

  • 1 cup finely chopped bell peppers (any color)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped spinach
  • 1/4 cup breadcrumbs
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the turkey breast by slicing it horizontally, about halfway through, and opening it like a book. Cover with plastic wrap and pound to an even 1/4-inch thickness.
  3. In a skillet, heat olive oil over medium heat. Add bell peppers and onion, sautéing until softened, about 5 minutes.
  4. Stir in spinach, breadcrumbs, thyme, rosemary, and garlic powder. Cook for another 2 minutes until spinach wilts. Season with salt and pepper.
  5. Spread the vegetable mixture evenly over the pounded turkey breast, leaving a small border.
  6. Carefully roll up the turkey breast tightly, starting from one of the longer sides.
  7. Tie the roulade securely with kitchen twine at intervals to maintain its shape.
  8. Season the outside of the roulade with salt and pepper.
  9. Place the turkey roulade in a roasting pan.
  10. Roast for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
  11. Let the roulade rest for 10 minutes before slicing and serving.
