  • 1 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced

  • Salt and black pepper to taste
  • 1 lb orzo pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, minced garlic, oregano, salt, and pepper.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat your oven to 400°F (200°C).
  4. In a large oven-safe skillet or baking dish, combine the marinated chicken, red bell pepper, yellow bell pepper, zucchini, red onion, and cherry tomatoes.
  5. Add the uncooked orzo pasta to the skillet and toss everything together to distribute the ingredients evenly.
  6. Pour the remaining marinade over the chicken and vegetable mixture. Stir gently to coat.
  7. Cover the skillet or baking dish with foil.
  8. Bake for 30 minutes.
