- 2 (8 oz) packages cream cheese, room temperature
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup pumpkin puree
- 2 teaspoons pumpkin spice
- 1 (9-inch) graham cracker crust, store bought or homemade
- whipped cream, optional topping
Instructions
- Preheat oven to 325°F (163°C).
- In a mixing bowl, beat cream cheese until smooth. Add sugar and vanilla, mix well. Incorporate eggs one at a time. Blend in pumpkin puree and pumpkin spice until smooth.
- Pour filling into the crust. Bake for 60-70 minutes until edges are set but center jiggles slightly.
- Cool in the oven with the door ajar for 1 hour. Chill in the refrigerator for at least 4 hours before serving.
