Ingredients

  • 2 (8 oz) packages cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup pumpkin puree
  • 2 teaspoons pumpkin spice
  • 1 (9-inch) graham cracker crust, store bought or homemade
  • whipped cream, optional topping

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a mixing bowl, beat cream cheese until smooth. Add sugar and vanilla, mix well. Incorporate eggs one at a time. Blend in pumpkin puree and pumpkin spice until smooth.
  3. Pour filling into the crust. Bake for 60-70 minutes until edges are set but center jiggles slightly.
  4. Cool in the oven with the door ajar for 1 hour. Chill in the refrigerator for at least 4 hours before serving.
