- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- a pinch of salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, cream together 1 cup of unsalted butter, 1/2 cup of granulated sugar, and 1 cup of brown sugar until light and fluffy.
- Beat in 2 large eggs and 1 teaspoon of vanilla extract until well combined.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1/2 cup of cocoa powder, 1 teaspoon of baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
- Gently fold in 1 cup of semi-sweet chocolate chips and 1/2 cup of crushed peppermint candies.
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- For an extra touch, melt some additional chocolate and drizzle it over the cooled cookies, then sprinkle with more crushed peppermint if desired.
