Delicious Peppermint Bark Cookies Recipe for the Holidays!


Ingredients

  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • a pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, cream together 1 cup of unsalted butter, 1/2 cup of granulated sugar, and 1 cup of brown sugar until light and fluffy.
  3. Beat in 2 large eggs and 1 teaspoon of vanilla extract until well combined.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1/2 cup of cocoa powder, 1 teaspoon of baking soda, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
  6. Gently fold in 1 cup of semi-sweet chocolate chips and 1/2 cup of crushed peppermint candies.
  7. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for about 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. For an extra touch, melt some additional chocolate and drizzle it over the cooled cookies, then sprinkle with more crushed peppermint if desired.
