Delicious Orange Honey Cakes with Gin Extract Flavor

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 pinch salt
- ½ cup unsalted butter, softened
- ½ cup honey
- 2 large eggs (or 2 flax eggs)
- 2 tablespoons orange gin extract
- Zest of 1 orange
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin or line it with paper liners to prevent sticking.
- In a large bowl, whisk together 2 cups of flour, 2 teaspoons of baking powder, and a pinch of salt. Set aside.
- In another bowl, beat ½ cup of softened unsalted butter with ½ cup of honey until creamy. Add 2 large eggs (or 2 flax eggs) and 2 tablespoons of orange gin extract, mixing well.
- Stir in the zest of 1 orange to the wet mixture for an extra burst of flavor.
- Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix!
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cakes from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Serve warm or at room temperature, paired wonderfully with a cup of tea or coffee!
