Delicious Orange Honey Cakes with Gin Extract Flavor


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • ½ cup unsalted butter, softened
  • ½ cup honey
  • 2 large eggs (or 2 flax eggs)
  • 2 tablespoons orange gin extract
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or line it with paper liners to prevent sticking.
  3. In a large bowl, whisk together 2 cups of flour, 2 teaspoons of baking powder, and a pinch of salt. Set aside.
  4. In another bowl, beat ½ cup of softened unsalted butter with ½ cup of honey until creamy. Add 2 large eggs (or 2 flax eggs) and 2 tablespoons of orange gin extract, mixing well.
  5. Stir in the zest of 1 orange to the wet mixture for an extra burst of flavor.
  6. Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix!
  7. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  8. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cakes from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  10. Serve warm or at room temperature, paired wonderfully with a cup of tea or coffee!
