Instructions
- In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.
- Add diced zucchini, red bell pepper, and frozen corn to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften.
- Stir in the brown rice, broccoli florets, vegetable broth, dried Italian herbs, salt, and pepper. Bring the mixture to a boil.
- Reduce heat to low, cover the skillet, and simmer for about 45 minutes, or until the rice is cooked and most of the liquid is absorbed. Stir gently occasionally.
- Remove the skillet from heat. Stir in the shredded cheddar and grated Parmesan cheeses until melted and creamy.
- Taste and adjust seasoning with salt and pepper if needed.
- Garnish with fresh parsley if desired. Serve the cheesy vegetable and rice casserole warm.
