  • 1 cup broccoli florets (fresh or frozen)
  • 2 cups vegetable broth
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.
  2. Add diced zucchini, red bell pepper, and frozen corn to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Stir in the brown rice, broccoli florets, vegetable broth, dried Italian herbs, salt, and pepper. Bring the mixture to a boil.
  4. Reduce heat to low, cover the skillet, and simmer for about 45 minutes, or until the rice is cooked and most of the liquid is absorbed. Stir gently occasionally.
  5. Remove the skillet from heat. Stir in the shredded cheddar and grated Parmesan cheeses until melted and creamy.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Garnish with fresh parsley if desired. Serve the cheesy vegetable and rice casserole warm.
