Description

One Pan Cowboy Butter Tortellini Steak Bites Dinner is a simple yet flavorful dish that combines steak and cheese tortellini in a buttery sauce.


Ingredients

  • 1 ½ lbs boneless sirloin or ribeye steak, cut into 1-inch bite-sized pieces
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 12 oz cheese tortellini (fresh or refrigerated)
  • ½ cup grated Parmesan cheese
  • 1 cup water or broth (for cooking tortellini)

Instructions

  1. Pat steak dry, cut into 1-inch pieces. Toss with 1 tbsp olive oil, Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. In a small bowl, combine softened unsalted butter with minced garlic, red pepper flakes (if using), Dijon mustard, lemon juice, chopped parsley, chives, salt, and pepper. Mix well. Set both aside.
  2. Heat a large skillet over medium-high heat. Add 1 tbsp olive oil. Sear steak bites in a single layer for 2-3 minutes per side until a golden crust forms. Do in batches if needed. Remove steak and set aside.
  3. Add tortellini to the same skillet. Pour in 1 cup water or broth. Bring liquid to a simmer. Cover and cook for 5-7 minutes, or until al dente, stirring occasionally. If liquid evaporates too quickly, add a splash more.
  4. Once tortellini is cooked and most liquid absorbed, return seared steak (with any juices) to the pan. Add the prepared Cowboy Butter. Stir gently for 1-2 minutes until butter melts and coats all ingredients. Stir in grated Parmesan cheese.
  5. Taste and adjust seasoning. Serve immediately, garnished with extra fresh parsley or chives, if desired.
