One Pan Cowboy Butter Tortellini Steak Bites Dinner is a simple yet flavorful dish that combines steak and cheese tortellini in a buttery sauce.

- 1 ½ lbs boneless sirloin or ribeye steak, cut into 1-inch bite-sized pieces
- 1 tsp Cajun seasoning
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt, to taste
- Black pepper, to taste
- 2 tbsp olive oil
- 6 tbsp unsalted butter, softened
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- 1 tsp Dijon mustard
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 12 oz cheese tortellini (fresh or refrigerated)
- ½ cup grated Parmesan cheese
- 1 cup water or broth (for cooking tortellini)
Instructions
- Pat steak dry, cut into 1-inch pieces. Toss with 1 tbsp olive oil, Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. In a small bowl, combine softened unsalted butter with minced garlic, red pepper flakes (if using), Dijon mustard, lemon juice, chopped parsley, chives, salt, and pepper. Mix well. Set both aside.
- Heat a large skillet over medium-high heat. Add 1 tbsp olive oil. Sear steak bites in a single layer for 2-3 minutes per side until a golden crust forms. Do in batches if needed. Remove steak and set aside.
- Add tortellini to the same skillet. Pour in 1 cup water or broth. Bring liquid to a simmer. Cover and cook for 5-7 minutes, or until al dente, stirring occasionally. If liquid evaporates too quickly, add a splash more.
- Once tortellini is cooked and most liquid absorbed, return seared steak (with any juices) to the pan. Add the prepared Cowboy Butter. Stir gently for 1-2 minutes until butter melts and coats all ingredients. Stir in grated Parmesan cheese.
- Taste and adjust seasoning. Serve immediately, garnished with extra fresh parsley or chives, if desired.
