Ingredients
Scale
- 4 boneless, skinless chicken breasts
- ¼ cup olive oil
- 2 tablespoons lemon juice or apple cider vinegar
- 3 minced garlic cloves
- Herbs of choice (e.g. thyme, rosemary)
- Salt to taste
- Pepper to taste
- Paprika or Italian seasoning (optional)
- 2 tablespoons unsalted butter (or plant-based butter alternative)
- ½ cup chicken broth or vegetable broth
Instructions
- In a bowl, combine ¼ cup of olive oil, 2 tablespoons of lemon juice (or apple cider vinegar), 3 minced garlic cloves, and your choice of herbs. Whisk everything together until well blended.
- Place the chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your oven to 375°F (190°C).
- In an oven-safe skillet, melt 2 tablespoons of butter over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Sear the chicken breasts for about 3-4 minutes on each side until they are golden brown.
- After searing, pour in ½ cup of chicken (or vegetable) broth into the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Once done, remove the skillet from the oven and let the chicken rest for 5 minutes before slicing.
