Description

Maryland crab soup is a comforting classic that combines tender lump crab meat with vibrant vegetables in a savory broth.

Ingredients

Scale
  • 1 lb lump crab meat
  • 1 medium sweet onion, diced
  • 2 stalks celery, chopped
  • 1 cup bell peppers (red or green), diced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 2 tsp Old Bay seasoning
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp fresh lemon juice

Instructions

  1. In a large pot, heat oil over medium heat. Sauté onions and celery until tender, about 5 minutes.
  2. Add bell peppers and Old Bay seasoning; cook until softened, about 3-4 minutes.
  3. Stir in diced tomatoes and chicken broth; bring to a simmer for 10-15 minutes.
  4. Gently fold in lump crab meat and heat through for about 5 minutes.
  5. Slowly stir in heavy cream, warming without boiling for an additional 3-5 minutes.
  6. Finish with fresh lemon juice before serving hot with crusty bread.
