Description

Prepare to be utterly enchanted by this Magic Lemon Cobbler Delight! This recipe transforms simple ingredients into a symphony of zesty flavors and delightful textures, featuring a self-saucing lemon layer and a fluffy, cake-like topping that emerges as if by pure magic.

Ingredients

Scale
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 1½ cups granulated sugar, divided
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 2 cups hot water

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch (23×33 cm) baking dish.
  2. In a bowl, cream ½ cup unsalted butter with ¾ cup granulated sugar (from the ‘divided’ amount) until light and fluffy. Mix in 1 cup all-purpose flour, 1 tbsp baking powder, ¼ tsp salt, and ½ cup milk (from the ‘divided’ amount) until just combined. Spread this batter evenly into the prepared baking dish.
  3. In a separate bowl, whisk together the remaining ¾ cup granulated sugar, ¼ cup lemon juice, zest of 1 lemon, remaining ½ cup milk, and 2 cups hot water until smooth and thoroughly combined.
  4. Carefully pour the prepared lemon sauce mixture evenly over the cobbler topping batter in the dish. Do not stir. Transfer the dish to the preheated oven and bake for approximately 45-55 minutes, or until the topping is beautifully golden brown, puffed, and set, and the lemon sauce is bubbling around the edges.
  5. Once baked, remove from oven and place on a wire rack to cool for at least 20-30 minutes, allowing the sauce to thicken. Dust generously with powdered sugar before serving warm. For an enhanced treat, serve with fresh berries, whipped cream, or vanilla ice cream.
