Three Cheese Zucchini Rollatini is a delightful and comforting dish featuring layers of tender zucchini wrapped around a creamy blend of ricotta, mozzarella, and parmesan cheese.

- 3 medium zucchinis (sliced lengthwise into 1/8 inch strips)
- 1 cup ricotta cheese (fresh)
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 2 cups marinara sauce (store-bought or homemade)
- ¼ cup fresh basil (chopped)
- 2 tbsp olive oil
- Salt and pepper (to taste)
Instructions
- Preheat oven to 375°F (190°C). Slice zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta, mozzarella, parmesan, salt, pepper, and basil until creamy.
- Spread a thin layer of marinara sauce in the bottom of a baking dish. Place two tablespoons of cheese filling at one end of each zucchini strip and roll tightly.
- Arrange rolled zucchini seam-side down in the dish. Pour remaining marinara over the rolls and top with extra mozzarella if desired.
- Drizzle with olive oil, cover with foil, and bake for 25 minutes. Remove foil and bake for another 15 minutes until bubbly and golden brown.
- Let cool slightly before garnishing with fresh basil. Serve warm.
