  • 1 packet taco seasoning
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) refried beans (optional, for taco casserole no beans tortillas, omit)
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 810 corn tortillas or flour tortillas, cut into 1-inch pieces
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, salsa, chopped cilantro, diced onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  3. Stir in the taco seasoning, diced tomatoes, refried beans (if using), and Rotel. Bring to a simmer and cook for 5 minutes, stirring occasionally. This is your taco casserole filling.
  4. In a greased 9×13 inch baking dish, layer half of the cut tortillas at the bottom.
  5. Spread half of the taco meat mixture over the tortillas.
  6. Sprinkle half of the shredded cheeses over the meat mixture.
  7. Repeat the layers: add the remaining tortillas, then the remaining taco meat mixture, and finally the remaining cheeses. This creates a layered taco casserole tortillas.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  9. Let the irresistible taco casserole rest for 5 minutes before serving.
