- 1 packet taco seasoning
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) refried beans (optional, for taco casserole no beans tortillas, omit)
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
- 8–10 corn tortillas or flour tortillas, cut into 1-inch pieces
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Optional toppings: sour cream, salsa, chopped cilantro, diced onions
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Stir in the taco seasoning, diced tomatoes, refried beans (if using), and Rotel. Bring to a simmer and cook for 5 minutes, stirring occasionally. This is your taco casserole filling.
- In a greased 9×13 inch baking dish, layer half of the cut tortillas at the bottom.
- Spread half of the taco meat mixture over the tortillas.
- Sprinkle half of the shredded cheeses over the meat mixture.
- Repeat the layers: add the remaining tortillas, then the remaining taco meat mixture, and finally the remaining cheeses. This creates a layered taco casserole tortillas.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
