- 2 cups fresh baby spinach (packed)
- 1 can (14 oz) artichoke hearts (drained and chopped)
- 8 oz cream cheese (softened)
- 1 cup Parmesan cheese (freshly grated)
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, sauté fresh spinach until wilted, about 3-4 minutes.
- In a bowl, mix wilted spinach, chopped artichokes, cream cheese, Parmesan, garlic powder, salt, and pepper until smooth.
- Roll out puff pastry on a floured surface into a rectangle.
- Spread the spinach-artichoke mixture evenly on the pastry, leaving edges clear.
- Roll tightly from one edge into a log shape and slice into 1-inch pieces.
- Place on a parchment-lined baking sheet and brush with beaten egg.
- Bake for 20-25 minutes or until golden brown.
