Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (32 oz) carton chicken broth
  • 8 oz dry pasta (penne, rotini, or farfalle work well)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and season with Italian seasoning, garlic powder, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add chopped onion to the pot and cook until softened, about 3-5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the diced tomatoes (with their juice) and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  4. Stir in the dry pasta. Return the browned chicken to the pot.
  5. Cover the pot and reduce heat to medium-low. Simmer for 15-20 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  6. Stir in the heavy cream and Parmesan cheese. Cook for another 2-3 minutes until the sauce has thickened.
