- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (32 oz) carton chicken broth
- 8 oz dry pasta (penne, rotini, or farfalle work well)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and season with Italian seasoning, garlic powder, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
- Add chopped onion to the pot and cook until softened, about 3-5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Pour in the diced tomatoes (with their juice) and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
- Stir in the dry pasta. Return the browned chicken to the pot.
- Cover the pot and reduce heat to medium-low. Simmer for 15-20 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
- Stir in the heavy cream and Parmesan cheese. Cook for another 2-3 minutes until the sauce has thickened.
