Description

Ingredients

  • 2 large sweet onions, sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 2 tbsp olive oil
  • 2 tsp fresh thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced onions and sauté until golden brown and translucent, about 15-20 minutes.
  2. Add minced garlic during the last minute of cooking until fragrant.
  3. Pour in beef broth and bring to a simmer. Stir in pasta and cook according to package instructions until al dente.
