Instructions
- Crush 300g gingerbread cookies into fine crumbs using a food processor or rolling pin. Set aside in a large mixing bowl.
- In a separate medium bowl, beat 120g softened cream cheese until smooth and fluffy. Mix in ½ tsp ground cinnamon, ¼ tsp ground nutmeg, ¼ tsp ground cloves, and 1 tsp vanilla extract until just combined.
- Combine the cream cheese mixture with the crushed gingerbread crumbs. Mix thoroughly with a sturdy spatula or your hands until a thick, uniform dough forms that is pliable but not overly sticky.
- Scoop and roll the mixture into 1 to 1.5-inch balls. Place them on a parchment paper-lined baking sheet or tray.
- Chill the truffle balls in the refrigerator for at least 1-2 hours, or in the freezer for about 30-45 minutes, until they are firm.
- Melt 250g white chocolate chips or wafers using a double boiler method or in a microwave-safe bowl in 30-second intervals, stirring until completely smooth and fluid.
- Using a dipping fork or sturdy toothpick, carefully dip each chilled truffle into the melted white chocolate, ensuring it’s fully coated. Gently tap off any excess chocolate.
- Immediately place the coated truffle back on the parchment-lined baking sheet and sprinkle with your chosen optional toppings while the chocolate is still wet. Work quickly, as the chocolate will begin to set on the cold truffle.
- Return the decorated truffles to the refrigerator for at least 30 minutes, or until the chocolate coating is completely firm. Once set, store these delightful truffles in an airtight container in the refrigerator for up to 1-2 weeks. For best flavor, allow them to come to room temperature for 15-20 minutes before serving.
