- 4 large flour tortillas
- 2 cups fresh spinach, washed and dried
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Sauté the spinach in 1 tbsp olive oil over medium heat until wilted (2-3 minutes).
- In a bowl, combine sautéed spinach, feta, mozzarella, oregano, salt, and pepper.
- Heat a clean skillet and place one tortilla inside. Spread half of the filling on one half of the tortilla and fold over.
- Cook each side until golden brown (3-4 minutes), then slice into triangles.
- Serve warm with your favorite dipping sauce or plain yogurt.
