Description

Mediterranean quesadillas with spinach are a flavorful fusion of fresh ingredients that transport you to sun-kissed shores with every bite. These easy-to-make quesadillas feature crisp tortillas, vibrant spinach, and melty cheeses, making them perfect for any meal or gathering.


Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, washed and dried
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Sauté the spinach in 1 tbsp olive oil over medium heat until wilted (2-3 minutes).
  2. In a bowl, combine sautéed spinach, feta, mozzarella, oregano, salt, and pepper.
  3. Heat a clean skillet and place one tortilla inside. Spread half of the filling on one half of the tortilla and fold over.
  4. Cook each side until golden brown (3-4 minutes), then slice into triangles.
  5. Serve warm with your favorite dipping sauce or plain yogurt.
