Description

Crispy Garlic Herb Roasted Potato Skins are a culinary celebration, combining golden-brown crunch infused with fragrant roasted garlic and aromatic herbs, cradling a molten layer of cheese and a fluffy potato interior.


Ingredients

  • 6 Russet potatoes (34 lbs)
  • 3 tbsp olive oil, plus more for brushing
  • 1 tsp salt, plus more to taste
  • 1/2 tsp black pepper, plus more to taste
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp dried Italian herb blend
  • 1/2 tsp smoked paprika (optional)
  • 4 tbsp unsalted butter
  • 1/2 cup sour cream, plus more for serving
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 6 slices beef bacon, cooked until crispy and crumbled (optional)
  • 3 green onions, sliced
  • Fresh chives or parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet. Wash, dry, and prick potatoes with a fork. Drizzle with 2 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper; rub to coat. Bake for 60-75 minutes until tender. Let cool for 15-20 minutes.
  2. Slice potatoes in half lengthwise. Scoop out flesh, leaving a 1/4-inch border; place flesh in a bowl and empty skins, cut-side up, on the baking sheet. Combine 1 tbsp olive oil, garlic powder, onion powder, Italian herb blend, and smoked paprika; brush inside and outside of each potato skin. Bake for 10-15 minutes until golden brown and crispy.
  3. While skins bake, add butter, 1/2 cup sour cream, half of both cheeses, and crumbled beef bacon (if using) to scooped potato flesh. Mash until combined; season to taste. Stir in half of the sliced green onions. Remove skins from oven; increase oven to 425°F (220°C).
  4. Spoon filling into crispy potato skins, mounding generously. Sprinkle remaining cheeses over top. Bake for 8-12 minutes until cheese is melted, bubbly, and golden. Garnish with remaining green onions and chives/parsley (if desired). Serve hot with extra sour cream for dipping.
