Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 23 tbsp granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer or whisk until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the creamed mixture and beat until fully combined.
  4. In a separate bowl, whisk together the flour, salt, and baking soda. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden brown.
  6. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  7. Once the cookies are cool, sprinkle about 1 teaspoon of granulated sugar on top of each cookie and caramelize the sugar using a kitchen torch until it melts and forms a crispy crust.
