Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken breasts until golden brown on both sides and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  5. Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet.
  6. Stir in sun-dried tomatoes and bring the sauce to a simmer.
  7. Reduce heat and cook for 5 minutes, or until the sauce has thickened slightly.
  8. Stir in fresh spinach and cook until wilted.
  9. Add Parmesan cheese and stir until melted and the sauce is smooth.
  10. Return chicken breasts to the skillet and spoon the sauce over them.
