- 1 cup Arborio rice
- 2 cups fresh spinach, chopped
- 1 cup cremini mushrooms, sliced
- 4 cups vegetable broth (warmed)
- 1/2 cup grated Parmesan cheese
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter
- 1/2 cup white wine (optional)
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, warm olive oil or butter. Sauté onion and garlic until translucent (about 4 minutes).
- Add sliced mushrooms and cook until caramelized (about 5 minutes).
- Stir in Arborio rice, toasting for 1-2 minutes.
- Pour in white wine and stir until absorbed.
- Gradually add warm vegetable broth one cup at a time, stirring frequently until absorbed before adding more.
- When the rice is al dente (about 18-20 minutes), fold in fresh spinach and grated Parmesan cheese until creamy.
- Serve hot, garnished with extra Parmesan if desired.
