Description

Creamy Spinach Mushroom Risotto is a comforting, rich dish that combines velvety Arborio rice with earthy mushrooms and vibrant spinach, finished with a sprinkle of Parmesan cheese.


Ingredients

  • 1 cup Arborio rice
  • 2 cups fresh spinach, chopped
  • 1 cup cremini mushrooms, sliced
  • 4 cups vegetable broth (warmed)
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1/2 cup white wine (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, warm olive oil or butter. Sauté onion and garlic until translucent (about 4 minutes).
  2. Add sliced mushrooms and cook until caramelized (about 5 minutes).
  3. Stir in Arborio rice, toasting for 1-2 minutes.
  4. Pour in white wine and stir until absorbed.
  5. Gradually add warm vegetable broth one cup at a time, stirring frequently until absorbed before adding more.
  6. When the rice is al dente (about 18-20 minutes), fold in fresh spinach and grated Parmesan cheese until creamy.
  7. Serve hot, garnished with extra Parmesan if desired.
