- 2 cups fresh spinach
- 1 can (14 oz) artichoke hearts, drained
- 4 oz cream cheese
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Cook the spaghetti in salted boiling water according to package instructions until al dente. Reserve some pasta water and drain.
- In a large skillet over medium heat, add olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
- Add fresh spinach to the skillet and cook until wilted.
- Lower the heat and stir in cream cheese and heavy cream until smooth.
- Add drained artichokes along with their marinade; cook for 3 minutes.
- Toss the cooked spaghetti into the sauce, mixing well. If needed, add reserved pasta water for desired consistency.
- Stir in grated Parmesan cheese and lemon juice; season with salt and pepper before serving.
