  • 8 oz spaghetti
  • 2 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained
  • 4 oz cream cheese
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Cook the spaghetti in salted boiling water according to package instructions until al dente. Reserve some pasta water and drain.
  2. In a large skillet over medium heat, add olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted.
  4. Lower the heat and stir in cream cheese and heavy cream until smooth.
  5. Add drained artichokes along with their marinade; cook for 3 minutes.
  6. Toss the cooked spaghetti into the sauce, mixing well. If needed, add reserved pasta water for desired consistency.
  7. Stir in grated Parmesan cheese and lemon juice; season with salt and pepper before serving.
