- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 tbsp butter
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear chicken thighs until golden brown on both sides and cooked through. Remove chicken from skillet and set aside.
- Add sliced mushrooms to the skillet and cook until softened and browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in heavy cream, Parmesan cheese, and thyme. Bring to a simmer and cook until the sauce thickens slightly, about 3-5 minutes.
- Return the chicken thighs to the skillet and coat them in the creamy mushroom sauce.
- Simmer for another 2-3 minutes until the chicken is heated through.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot.

- For a lighter sauce, you can use half-and-half instead of heavy cream.
