Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken thighs until golden brown on both sides and cooked through. Remove chicken from skillet and set aside.
  4. Add sliced mushrooms to the skillet and cook until softened and browned, about 5-7 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  7. Stir in heavy cream, Parmesan cheese, and thyme. Bring to a simmer and cook until the sauce thickens slightly, about 3-5 minutes.
  8. Return the chicken thighs to the skillet and coat them in the creamy mushroom sauce.
  9. Simmer for another 2-3 minutes until the chicken is heated through.
  10. Taste and adjust seasoning with salt and pepper if needed.
  11. Serve hot.
