- 1 medium sweet onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream or coconut milk
- 1 cup shredded sharp cheddar cheese
- ½ cup cooked bacon bits (optional)
- ¼ cup chopped green onions for garnish
- 2 tablespoons olive oil
Instructions
- Wash and chop the cauliflower into florets. Dice the onion and mince the garlic.
- In a large pot over medium heat, heat olive oil. Add onions and cook until translucent (about 5 minutes).
- Stir in garlic and cauliflower; sauté for 3-4 minutes until slightly softened.
- Add vegetable broth to cover the vegetables. Bring to a boil, then reduce to simmer for 15 minutes until tender.
- Use an immersion blender or transfer to a regular blender to blend until smooth.
- Return blended soup to low heat; stir in cream or coconut milk along with cheese until melted (about 5 minutes).
