Description

Experience the delightful bliss of cranberry apple twice-baked sweet potatoes. This dish is an event, perfect for Thanksgiving or any cozy gathering. The richness of sweet potatoes combined with tart cranberries and crisp apples creates an explosion of flavors.

Ingredients

Scale
  • 2 large sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 1 cup diced apples (such as Honeycrisp or Fuji)
  • 1/4 cup chopped pecans
  • 2 tablespoons maple syrup
  • 1 tablespoon butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the sweet potatoes several times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
  3. Let the sweet potatoes cool slightly, then slice them in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch border to form a shell.
  4. In a bowl, mash the scooped-out sweet potato flesh.
  5. Add the cranberries, diced apples, pecans, maple syrup, melted butter, cinnamon, nutmeg, and salt to the mashed sweet potato. Mix well to combine. This is your irresistible cranberry apple filling.
  6. Spoon the filling back into the sweet potato shells.
  7. Return the filled sweet potatoes to the baking sheet.
  8. Bake for another 15-20 minutes, or until the topping is lightly browned and the filling is heated through.
  9. Serve your irresistible cranberry apple twice-baked sweet potatoes warm.

Notes

  • For a sweeter dessert, you can add an extra tablespoon of maple syrup.
  • Feel free to substitute walnuts for pecans.
  • Ensure your apples are firm and crisp for the best texture in your cranberry apple crumble bake.
  • This recipe is a wonderful base for a cranberry apple crisp.
