- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1 cup seasoned breadcrumbs
- 1 tsp paprika
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Season chicken with salt and pepper. Cook in a skillet over medium heat until cooked through (6-7 minutes per side). Chop into bite-sized pieces.
- Blanch broccoli in boiling water for 3-4 minutes until bright green; drain.
- In a bowl, mix cream of mushroom soup, mayonnaise, lemon juice, and half of the cheddar cheese until smooth.
- Combine chicken and broccoli with the sauce; stir gently to coat.
- Pour mixture into the baking dish, top with remaining cheese and breadcrumbs.
- Bake for 25-30 minutes until bubbly and golden brown.
