Instructions
- If you’re smoking your salmon, follow your preferred method to achieve hot smoked salmon. This can be done on a stovetop smoker or a grill.
- Using a mandoline or a sharp knife, slice the zucchinis into thin rounds or ribbons.
- In a large mixing bowl, combine the sliced zucchini, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad mixture and gently toss to combine, ensuring all ingredients are coated.
- Arrange the zucchini salad on a serving platter.
- Flake the hot smoked salmon into bite-sized pieces and place it on top of the zucchini salad.
